Fülemüle (Nightingale) Restaurant’s cooking strengths range from special home-made smoked meats, to stuffed goose-neck, along with perfectly cooked Argentine Angus steak for those with an international taste. For dessert, their walnut-crusted Matzah balls with chocolate coating are always good, as are the locally inspired sweet-noodles with apple, walnut, and poppy-seeds.

The interior is covered with hundreds of pictures, which the owners say they got from family, friends and guests. The Singer family took over the management of Fülemüle in 2000, András Singer has a lifetime of experience in the restaurant business, and apparently the head of the family - his wife - Mari Singer is quite handy at managing of the restaurant.

Together with Viktor and Balázs, the family’s two younger members, they offer homely service and a truly Hungarian dining experience. Balázs is married to Zsu, and their daughter Viki has become the face of the restaurant. As a team they’re received a fair bit of attention and plenty of culinary prizes over the past few of years.

The awards are for their middle-European Jewish and Hungarian traditional dishes. Many of the best menu items are made from goose, such as goose breast served with a ragout of forest-treasures, plus many kinds of goose liver specialities too. Also worth mentioning is that portions are big, and so value for money is high.

Recently a guest from Singapore wrote on TripAdviser, “There are not a lot of restaurants like this left anywhere in the world. Personal attention by the people who own the place and run the place. Good ambiance, great Hungarian dishes, good quality seasonal ingredients with heart-and-soul. Quite possibly the best cholent ever. Arrive hungry, expect to need a long walk after.

We can’t say better than that. All we can add is that this intimate style setting almost feels like visiting your Aunt's for dinner. It’s quite busy at midday as they offer daily lunch menus that change each week. Just like a Nighingale, which likes nothing better than hiding in the middle of a nearly impenetrable bush, this hidden gem is almost secretly located in the 8th district of downtown Pest. Seek it out and take delight in a positively authentic Hungarian experience.
