Salmon Weeks & Dinner At InterContinental Budapest
Salmon is an excellent source of high quality protein, minerals and vitamins. In September our Corso Restaurant is offering a wide range of salmon dishes like salmon saltimbocca with sage and Parma ham on rucola risotto, accompanied with balsamic jus.

Highlights of the menu

Lemon flavoured jelly with salmon and scallops served with mesclun salad and green asparagus mousseline

Spice rubbed salmon

Salmon marinated in a variety of spices, served with a confit made of apples and red radish, accompanied with Wasabi cream

Salmon Saltimbocca

Pan fried salmon escalope with sage and Parma ham on rucola risotto, accompanied with balsamic jus

Salmon fillet sous vide with sesame – apricot -sofrito

Salmon poached with herbs and spices in a vacuum bag, topped with sautéed apricots, Sesame and chilli – bread crumbs, served on beluga lentil ragout

Grilled salmon fillet served on sautéed cucumber, potato snow, Dijon and grapes mustard sauce duo

Salmon in lemon pepper crust with lukewarm Mediterranean salad, rucola pesto and brioche spiced with horseradish
